Ingredients

2 cups Broccoli florets
2 stalks Celery finely diced
1 Onion finely diced
2 cloves Garlic crushed
1 cup Mixed greens (kale, spinach, beet greens or any other available)
1 Parsnip peeled and finely chopped
1 Carrots peeled and finely chopped
2 cups Vegetable broth low sodium or water
½ tsp Sea salt
2 tbsp Lemon juice
1 tsp Coconut oil
1 tbsp Poppy seeds
For the garnish
1 tbsp Seeds and Nuts to taste
1 tsp Coconut milk

This gorgeous green Broccoli Detox Soup is a creamy wholesome vegan soup which is packed full of flavor. The soup has a wonderful medley of vegetables including kale which is one of my favorite superfoods. Did you know that kale is one of the most nutrient-dense foods ever and it contains loads of vitamins and minerals.

To make this soup, I start by frying some veggies in a large pot. Then I add various other ingredients in stages. When it’s cooked, I transfer the soup to a food processor or blender and blend until it is smooth. You have got to try it!

Steps to make Broccoli Detox Soup

Fry onions, garlic, celery and carrot

Heat the coconut oil in a large pot or Dutch oven over low heat. Add the onion, garlic, carrot, parsnip, celery sticks and broccoli and fry for 5-7 minutes.

Add the broth

Add the vegetable broth or water and bring to a boil. Cover the pot with a lid and simmer for 5-7 minutes.

Add the greens

Stir in the greens.

Blend

Add the mixture to a blender along with the poppy seeds and lemon. Blend until you have a smooth, creamy soup.

Serve

Serve this soup garnished with coconut milk and a sprinkle of toasted seeds and nuts.

Lemon in this broccoli soup doesnt mix well together wouldr recommend not even adding it.
