I designed this Broccoli Grape Salad when I was looking for the best salads to serve at my meaty barbecues that would add substance and color to the table but still compliment my high quality proteins without stealing the show. Toss up crispy bacon bits with toasted pine nuts, fresh broccoli crowns, cucumber slices, juicy red grapes and aromatic, finely chopped, red onion. The dressing is a simple and tangy mix of mayonnaise, lemon juice, sugar, salt and pepper, marinated together to allow the flavors to burst out.
To make Broccoli Grape Salad, you will need the following ingredients:
In a skillet, brown bacon until crispy then remove using a slotted spoon and drain on a plate lined with paper towels.
In a separate skillet over medium heat, toast pine nuts for about 3 minutes, stirring often until golden and fragrant. Remove from heat.
In a medium salad bowl, toss 1 lb chopped broccoli florets, ½ English cucumber slices, 1½ cups red, seedless grapes, ¼ cup finely chopped red onion, bacon bits and toasted pine nuts until well incorporated.
In a small mixing bowl, whisk ½ cup mayonnaise, 2 tablespoons lemon juice, 1 tablespoon sugar, ¼ teaspoon salt and ¼ teaspoon pepper until well combined.
Generously toss the prepared dressing into the salad, then serve and enjoy!
