Yes, yes and yes again to this Butter Chicken recipe which I serve with some basmati rice and crispy poppadoms for the full Indian experience. If you enjoy cooking from scratch then this recipe will speak to your heart using a whole rainbow of spices like turmeric, garam masala, chili or cayenne, cumin, ginger and garlic for the chicken marinade and butter, tomato paste and thickened cream sauce that gives you the right touch of spice with a little hint of perfection!
To make Butter Chicken, you will need the following ingredients:
In a food processor, combine ½ cup of plain yogurt, 1 tablespoon of lemon juice, 1 teaspoon of turmeric powder, 2 teaspoons of garam masala, ½ teaspoon of chili powder or cayenne pepper powder, 1 teaspoon of ground cumin, 1 tablespoon of freshly grated ginger, 2 cloves of crushed garlic until smooth.
In a large bowl, pour the prepared marinade over 1.5 pounds of chicken pieces and generously coat well. Cover the bowl with some plastic wrap and refrigerate for about 3 hours to overnight to marinate.
In a large frying pan, heat 2 tablespoons of ghee, or butter or oil if using. Before adding the chicken to the hot pan, lift the pieces out of the marinade and gently shake off any excess, leaving any remaining marinade in the bowl. Cook in the heat pan for about 3 minutes until white all over.
Add 1 cup of tomato passata, 1 cup of cream, 1 tablespoon of sugar and 1¼ teaspoons of salt to the pan and lower the heat for about 20 minutes to simmer. Season to taste.
Garnish with sprinkles of coriander or cilantro, if you wish and a portion of basmati or white rice on the side. Enjoy!
