Caramelized butternut squash, roasted garlic, creamy feta, baby spinach, and thyme give this pasta tons of flavor. Plus, this pasta is after-work fast and ready on the table in minutes.
Start by roasting the butternut squash, whole head garlic, and feta cheese with olive oil and thyme. In the meantime, cook the pasta, reserving some of the pasta cooking water. Once the butternut squash is tender and caramelized, peel the garlic, then mash and stir it through the butternut squash. Top the dish with spinach, then add the cooked pasta and about ¼ cup of pasta water. Toss well to combine, adding more pasta water if needed. Serve immediately, garnished with toasted walnuts and chili flakes if you wish.
