I adore this Caramelized-Leek and Bacon Pizza – I got the idea from a new pizzeria which opened up in my neighbourhood! I think it is the perfect flavor combination. Salty bacon and sweet leeks. What’s not to love?

To make this pizza, start by cooking bacon until crisp. Sauté leeks in the same pan until soft. 

Flatten pizza dough to a 12-inch ½-inch thick circle. Drizzle the crust with olive oil and sprinkle on garlic powder. Spread a thin layer of mascarpone on the crust. Sprinkle half of the mozzarella on top and scatter with leeks and bacon. Sprinkle on Parmesan and remaining mozzarella. Bake in the oven until the crust is golden and the cheese is bubbly. Let sit 2 minutes before slicing.

    Cook 6 slices of bacon for about 8 minutes in a large pan over medium heat until crisp. Transfer the cooked bacon to a plate lined with paper towels and chop into small pieces or crumble. Set aside.
