This Carrot Apple Raisin Salad is a perfect side salad for your next BBQ. What a brilliant flavor combination in this one – sweet carrot, apple and raisins with buttery pecan nuts. These are combined with a zingy, yet creamy lemon and ginger dressing.
To make this salad, simply mix carrots, apple, raisins and pecans in a large bowl. Make the dressing by mixing yogurt, sour cream, mayonnaise, honey, lemon peel, lemon juice, ginger root and salt. Toss the dressing with the carrot mixture gently to coat. Serve immediately or chill in the refrigerator for up to 2 hours. Just before serving, garnish the salad with additional chopped pecans.
To make Carrot Apple Raisin Salad, you will need the following ingredients:
Mix 1 pound of carrots, 1 chopped apple, ½ a cup of raisins and 1 tablespoon of chopped, toasted pecans in a large salad bowl.
In a small jug or bowl, whisk together ¼ cup of plain fat-free yogurt, ¼ cup of sour cream, ¼ cup of reduced-fat mayonnaise, 1 tablespoon of honey, ¼ teaspoon of grated lemon peel, 1 teaspoon of fresh lemon juice, 1 teaspoon of grated ginger root and ⅛ teaspoon of salt.
Add dressing to the carrot mixture. Toss gently until fully coated.
Sprinkle some remaining chopped toasted pecans on top of the salad to garnish.
Serve immediately or chill for up to 2 hours in the refrigerator if you make this in advance.
