Ingredients

1 ½ cups White whole-wheat flour
½ cup Quick oats
1 tsp Baking soda
1 tsp Cinnamon
¼ tsp Ground nutmeg
¼ tsp Salt
2 Bananas medium, overripe, ¾ cup mashed
½ cup Brown sugar
1 Large eggs at room temperature
1 tsp Vanilla extract
¼ cup Applesauce unsweetened

2 Carrots large, shredded, 1 heaping cup
2 tbsp Melted coconut oil cooled

Preheat the oven to 350 °F and coat a 9x5-inch loaf pan with cooking spray.

Combine dry ingredients

In a large bowl, whisk together 1 ½ cups white whole wheat flour, ½ cup quick oats, 1 teaspoon baking soda, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt.
