I made this Breakfast Casserole with Bacon and Hash Browns recently for my cousin and his wife who were staying with me for the weekend. They were blown away by how delicious and filling it was. It kept us going until dinner!
To make this, I start by grating potatoes for the hash brown. I fry the bacon, onion and bell pepper in a skillet before cooking the potato. Once the potato is cooked, I add eggs and cheese and bake the casserole in the oven.
To make Breakfast Casserole with Bacon and Hash Browns, you will need the following ingredients:
Peel the potatoes and grate them. Squeeze the excess liquid from the potatoes and dry them with paper towels. Set aside.
Place a large skillet over medium high heat and sauté the bacon in the skillet.
Add the onion and bell pepper and cook for 5-7 minutes more, stirring occasionally. Transfer the contents of the skillet to a plate.
Preheat the oven to 350 ˚F.
In the same pan, heat some olive oil. Add the grated potatoes and cook for about 7 minutes, flipping occasionally. Spread the potatoes out on the bottom of the pan. Remove from the heat.
Whisk 6 large eggs together in a medium sized bowl. Whisk in the sour cream, salt and pepper. Stir in the sautéed onion, bell pepper, bacon and ¾ cup of the mozzarella cheese.
Pour egg mixture into the skillet with the potatoes. Sprinkle the remaining cheese over the top.
Cover the skillet with foil and bake in the oven for 25 minutes. Remove foil 3-4 minutes before the end to allow the top to turn golden brown.
Serve slices of this casserole garnished with diced chives, tomatoes or avocado.
