This Cauliflower Mac & Cheese is a delicious comforting meat-free meal that makes a perfect low-carb weeknight dinner for the whole family. I use cauliflower instead of pasta in this recipe and to be honest, I don’t even miss the pasta!
To make this simple take on a classic, start by cooking cauliflower in a large pot of boiling water. As the cauliflower cooks, heat most of the milk in a large saucepan. Whisk the remaining milk and cornstarch in a cup until smooth and add to the hot milk to thicken. Remove the pan from the heat and stir in Cheddar and cream cheese until melted. Stir in the cauliflower and season to taste. Garnish with chives or parsley and there you have it – a simple guilt free mac & cheese!
To make Cauliflower Mac & Cheese, you will need the following ingredients:
Place 8 cups of cauliflower florets in a large saucepan of boiling water and cook for 4-6 minutes until just tender.
Place 1½ cups of milk in a large heavy-bottomed saucepan over medium-high heat. Heat until steaming but not boiling.
Whisk the remaining ¼ cup of milk with 2 tablespoons of cornstarch in a small bowl until you have a smooth mixture.
Add the cornstarch mixture to the saucepan of hot milk and cook while whisking constantly for 2-3 minutes until the sauce simmers and thickens.
Remove the sauce from the heat. Stir in 2 cups of Cheddar cheese and 8 ounces of cream cheese until melted. Season to taste with salt and pepper.
Stir in cooked cauliflower until fully combined.
Serve garnished with freshly chopped parsley or chives.
