To make the Cheesy Chicken & Black Bean Cauli Rice, you will need the following ingredients:
In a large skillet over medium heat, heat 1 tablespoon olive oil and add 1 chopped onion. Cook, stirring occasionally, for about 5 minutes or until soft.
Stir in 2 cloves minced garlic, 1 teaspoon dried oregano, and ½ teaspoon dried cumin and cook for 1 minute.
Add some more olive oil to the skillet if needed and then add 4 cups drained cauliflower rice. Season with salt and black pepper to taste and cook, stirring occasionally, for 3-5 minutes.
Stir in 1 tablespoon tomato paste.
Add in 2 cups shredded rotisserie chicken, 1 (15-oz) can black beans, 1 cup corn kernels, 1 cup chopped tomatoes, and 2 thinly sliced jalapeños, and ¼ cup chopped cilantro. Cook, stirring occasionally, until heated through for 2-3 minutes.
Top with 1 cup each shredded Cheddar and Monterey Jack cheeses. Cover with a lid and let melt, 2 minutes.
Serve hot with lime wedges and enjoy!
