Recipe Description

These Cheesy Mashed Potato Cups are by far the simplest cheesy and chunky, mashed potato recipe I have ever used. Simply boil potatoes, season with salt and pepper; and mash with butter and milk for an extra creamy yet still chunky texture. Melt handfuls of shredded cheese over the top of each serving and garnish with dried parsley. It’s just yum, yum, yum!

    Boil potatoes

    In a large saucepan, cover potatoes with enough water and bring to a boil then reduce the heat; cover and cook for 10-15 minutes until softened. Drain excess liquid from the potatoes.

    In a large bowl with milk, butter, salt and pepper, mash the potatoes until smooth.

    Lightly grease 2 x 6-portion muffin trays and divide the mashed potato, evenly between the muffin cups.
