I love a casserole for a handy midweek dinner and this Cheesy Mushroom and Broccoli Casserole does not disappoint. My family loves it because it tastes absolutely delicious and I love it because it is so simple to prepare and cook.
I start my casserole by making a roux – a mixture of flour and butter which is cooked together and used to thicken sauces. I add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock to the roux before adding broccoli, rice and cheese. I place it all in an ovenproof dish and bake for 20 minutes. Simple and delicious!
