Keto and casserole can go hand in hand, and this Chicken Bacon Caesar Casserole is a perfect example. The homemade sauce base for this casserole is hearty, cheesy, and loaded with yummy bacon. Add chicken and spinach, and you will have a warm and delicious weeknight dinner. Your family will love it! Besides, this dish is budget-friendly and quick to make.
Don’t be tempted to substitute store-bought Caesar dressing for a homemade version. The flavor of the dish will not be as good if you use any bottled stuff. To achieve a smooth and rich sauce without using cans of condensed soup, I make my sauce with a mix of cream cheese, sour cream, and mayo. My secret flavor booster? I use roasted garlic powder. This spice brings richness and depth and is totally worth the investment, so don’t leave it out! To make ahead: prepare the casserole through step 3 and place in the fridge for up to two days until you are ready to bake and devour.
To make the Chicken Bacon Caesar Casserole, you will need the following ingredients:
Preheat the oven to 350 °F and spray a 5x8-inch casserole dish with cooking spray.
In a bowl, combine 4 ounces cream cheese, 2 ounces sour cream, 2 ounces mayo, 1 teaspoon roasted garlic powder, and 1 teaspoon dried minced onion and mix well.
In a large bowl, combine the cream cheese mixture with 1 pound cubed chicken, 1 bag frozen and thawed spinach, ½ cup Parmesan cheese, and half the bacon and mix well.
Transfer the mixture to the prepared casserole dish. Top with 1 ounce shredded mozzarella cheese and remaining bacon.
Bake in the oven for 35 minutes until hot and the cheese is melted and starting to brown.
Remove from the oven and leave to cool for 10 minutes before serving warm.
