8 Chicken thighs skin on, bone-in
2 tsp Turmeric
1 tbsp Garam masala
2 tbsp Sunflower oil
2 Onion finely sliced
3 cloves Garlic sliced
500ml Chicken stock (from a cube is fine)
1 large handful Olives green , whole
Juice and zest of 1 Lemon
250g Couscous
small bunch flat-leaf Parsley chopped

Make dinner with this Chicken & Couscous One-Pot. Not only does this recipe cut out all the preparation and cleaning up from the cooking process, but it also tastes unbelievable too! Seasoned with turmeric and garam masala and filled with onions, garlic, green olives and lemon zest, this Eastern inspired chicken is a winner for dinner, every night!

Steps to make Chicken & Couscous One-Pot

Season chicken

Toss the chicken thighs in 1 teaspoon turmeric, ½ tablespoon garam masala and a pinch of salt until completely coated.

Cook chicken

In a large pan, heat 1 tablespoon oil and add chicken, skin-side down. Fry for 10 minutes, until golden brown, before turning over to cook for another 2 minutes, on the other side. Once cooked, remove from pan.

Cook onions

Add the remaining oil to the pan and fry the onions and garlic for 8 minutes, until golden.

Add spices

Add the remaining turmeric and garam masala and cook for another 1 minute.

Add chicken stock and olives

Pour in the chicken stock and add the onions. Bring to a boil.

Add chicken

Once boiling, lower the heat and sit the chicken, skin side up, in the stock. Cover the pan with a lid and simmer for 35-40 minutes until the chicken is tender.

Remove chicken

Remove chicken from pan and set aside to keep warm.

Add lemon juice and couscous

Remove the pan from the heat and add the lemon juice and couscous and stir to mix with the saucy onions. Top with enough boiling water to cover the couscous, if needed. Place the lid back on the pan and let stand for 5 minutes, until the couscous is cooked through.

Serve

Add half the parsley and lemon zest and using a fork, fluff up the couscous. Sit the chicken on top and garnish with remaining parsley and zest, before serving.
