It’s my belief that everyone should know how to put together a tasty Chicken Sandwich with Mayo and just in case you don’t, I’m sharing my version with you today!
I love this sandwich – creamy mayo, garlicky chicken, a hint of spice and some herbs and onions to finish off. It’s so much tastier than a shop-bought version and still takes next to no time to make. I usually make my sandwiches with ciabatta bread because I love how light it is, but I also sometimes use wholewheat or sourdough. You can use whatever you have at home or head down to the local bakery for something nice and fresh.
To make Chicken Sandwich with Mayo, you will need the following ingredients:
Spread butter on one side of each of the bread slices and toast them on a griddle pan or under the grill until just golden.
Heat a tablespoon of olive oil in the griddle pan and add the garlic, frying for one minute, Add the chicken and sauté until cooked through. Sprinkle with the spices and toss to coat. Remove from the heat and leave to cool.
In a small bowl, combine the mayo, mustard powder, and pepper. Add the chopped onions and herbs. Once the chicken has cooled, tip it into the mayo and mix well.
Spoon half the mixture over a slice of the bread. Press another slice on top and halve. Repeat with the other sandwich and serve.
