Ingredients

2 Chicken Breast cubed
½ cup Corn kernels fresh, frozen, or canned
½ cup Green peas fresh, frozen, or canned
½ cup Carrots fresh sliced thinly into small cuts, frozen, or canned
½ cup Bell pepper diced, fresh
1½ cup Heavy cream for extra creaminess, add 2 cups
2 Potatoes peeled, and sliced
1½ cups Cheese shredded
Salt to taste
Black pepper to taste
2 tbsp Olive oil divided
1 tbsp Seven spice or allspice
½ tbsp Garlic powder
½ tbsp Onion powder

This Chicken & Veggie Casserole is a perfect dish to make when you fancy some comfort food. A rich creamy recipe that is jam-packed with vegetables and chicken topped with delicious cheesy potatoes.

To make this delicious casserole, start by cooking chicken in a pan. Boil potato slices until tender. Cook all the vegetables in a skillet until tender. Transfer the chicken and vegetables to a casserole dish. Layer the potato slices on top and pour over the cream. Cook the casserole in the oven until the cream is bubbling. Once the dish is cooked, sprinkle cheese over the top and broil until bubbling and golden.

Steps to make Chicken & Veggie Casserole

Heat oven and prepare casserole dish

Preheat the oven to 375 °F. Lightly grease a 2-quart casserole dish.

Cook chicken

Add 1 tablespoon of olive oil to a pan to heat. Add chicken to the pan. Season with 1 tablespoon of seven spice, ½ a tablespoon of garlic powder, and ½ a tablespoon of onion powder. Add salt and pepper and cook for 5-10 minutes until just cooked through. Remove to a plate and set aside.

Boil potatoes

Bring a pot of salted water to a boil. Place potato slices in the pot to cook for 5-10 minutes on medium-high heat until the slices are just tender enough but not mush.

Cook veggies

Add 1 tablespoon of olive oil to the same pan, the chicken cooked, and add the vegetables. Season with salt and pepper and cook for 5-10 minutes with the lid on until the veggies are tender.

Assemble casserole

Transfer the cooked chicken and vegetables to an 8x8-inch casserole dish. Top with the potato slices and season with salt and pepper.

Add cream

Pour 1 ½ cups of cream into the casserole so the cream covers the chicken and veggie filling. If it is not covered, add some more.

Bake

Cover the casserole dish with aluminium foil. Bake in the oven for about 25 minutes until the cream is bubbling.

Broil

Remove the foil from the dish and scatter 1 ½ cups of cheese over the top of the potatoes. Place under the broiler on high for 1-2 minutes until the cheese is melted and lightly browned.

Serve

Serve warm.
