2 cups Chickpea flour
1 cup Water
1 tbsp Olive oil extra virgin
1 pinch Sea salt
For the toppings
5-6 spears Asparagus cut into halves, lengthwise
1 Red onion small, cut into round slices
2 springs Green onion diced
1 cup Arugula fresh
½ Pomegranate seeds, only
½ cup Chickpeas cooked
½ cup Kalamata olives pitted
1 Avocado ripe, peeled and cut into slices
2 Radishes cut into thin slices
4 tbsp Hummus
1 small bunch Fresh mint roughly chopped
2 tbsp Lemon juice freshly squeezed
1 tsp Olive oil extra virgin
2 cloves Garlic minced
Black pepper freshly ground, to taste
1 pinch Sea salt

The dough is a quick 3 minute preparation with no need for sitting, resting or rising time. I have chosen to use a wide range of popular, colorful and tasty topping for this recipe, to keep it interesting and pleasing to the eye.

Following an authentically Israeli flavor choice with the chickpeas, I add pomegranate seeds, kalamata olives, hummus, avocado, red onion and a fresh arugula and mint salad topped with lemon juice, crushed garlic, sea salt and ground black pepper. What more could a pizza need?

Preheat oven

Preheat the oven to 400 °F.

Combine ingredients for dough

In a medium bowl, combine the chickpea flour, olive oil, water and 1 pinch salt and mix to a sticky texture.

Prepare baking sheet

Line a baking sheet with parchment paper and use a spatula to spread the mixture into a thin, round layer.

Bake dough

Bake for 15 minutes in the oven. Remove and flip over.

Add some of the toppings and bake

Spread the hummus onto the whole surface. Top with the asparagus, red onion and olives. Drizzle with the olive oil. Bake in the oven for 15 more minutes.

Prepare salad toppings

Meanwhile, in a bowl, mix the arugula with mint, lemon juice, minced garlic, and olive oil.

Remove pizza

Remove the pizza from the oven, and set aside to cool for a few minutes.

Top with chickpeas, pomegranate seeds, avocado, radishes, and the green salad mix.
