This Chocolate Covered Cherry Fudge is a delicious Valentine’s Day idea. I adore fudge. It’s rich and sweet and so delicious. The texture is always so fudgy too! The cherries in this recipe do a great job of cutting through some of that rich creaminess.   

To make this sweet treat, start by heating sweetened condensed milk. Pour the hot sweetened condensed milk on top of the chocolate chips in a small bowl. Stir to melt chocolate chips. Slice cherries in half and place them in a small bowl and toss them with almond extract. Stir chocolate fudge mixture and pour into a pan with the cherries. Smooth the top and decorate with cherry halves. Leave to set before slicing and serving.

Steps to make Chocolate Covered Cherry Fudge

Line baking pan

Line a 6-inch round baking pan with parchment paper.

Heat sweetened condensed milk

Heat 7 ounces of sweetened condensed milk in a small saucepan over medium-low heat until small bubbles form on the edge of the pan. Do not bring to a boil.

Melt chocolate

Place 9 ounces of chocolate chips in a small bowl and pour in the hot sweetened condensed milk. Let sit for 1 minute before stirring gently. Set to one side briefly.

Slice cherries

Cut ⅓ cup of cherries in half and place them in a small bowl. Add ¼ teaspoon of almond extract and toss well.

Assemble fudge in pan

Stir chocolate mixture and pour half into the prepared pan. Scatter three-quarters of the cherries on top of the fudge and press down gently. Drizzle 2 tablespoons of sweetened condensed milk over the top and add the remaining chocolate mixture.

Decorate

Smooth the top and decorate with the remaining cherries.

Leave to set

Let the fudge set for an hour at room temperature, or chill in the refrigerator for 30 minutes.

Serve

Drizzle with a few tablespoons of sweetened condensed milk before slicing the fudge into 8 wedges.
