Ingredients

For cookies:
1 cup Sugar
1 cup Shortening
1 cup Canned pumpkin
1 Eggs
1 tsp Vanilla extract
2 cups All-purpose flour
1 tsp Baking soda
½ tsp Salt
1 tsp Cinnamon
1 cup Chocolate chips semi-sweet
For brown sugar glaze:
½ cup Brown sugar packed
3 tbsp Butter
3 tbsp Milk
1½ cups Powdered sugar

These Chocolate Pumpkin Cookies literally taste like fall. There is only one time of the year that I can eat cinnamon and that is fall leading up to Christmas, so when the season comes, I eat as much of it as I can! These cookies make perfect use of the earthy spice!

I start by making cookie dough with canned pumpkin. Then I fold in chocolate chips. I drop tablespoonfuls of the dough onto baking sheets and bake in the oven. Once cooked, I remove them from the oven and make a brown sugar glaze while the cookies cool. To make the glaze, mix brown sugar, butter and milk in a small saucepan. Bring the mixture to a boil. Then remove from the heat and add powdered sugar. Beat with an electric mixer until smooth. Drizzle the glaze over the cookies and enjoy!

Steps to make Chocolate Pumpkin Cookies

Heat oven and set baking sheets aside

Preheat the oven to 350 °F. Set 2 ungreased baking sheets to one side.

Mix wet ingredients

Beat 1 cup sugar and 1 cup shortening together using an electric mixer. Once creamy, add 1 cup of canned pumpkin, 1 egg, and 1 teaspoon of vanilla extract and continue beating until fully blended.

Mix dry ingredients

In a separate bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, and 1 teaspoon of cinnamon.

Combine wet and dry ingredients and add chocolate chips

Gradually add the dry ingredients to the shortening mixture and mix well. Fold in 1 cup of chocolate chips.

Bake

Drop tablespoonfuls of the cookie dough onto the ungreased baking sheets. Bake for 15 to 20 minutes. Remove from the oven and leave to cool.

Make glaze

Combine ½ a cup of brown sugar with 3 tablespoons of butter and 3 tablespoons milk in a small saucepan. Bring mixture to a boil over medium heat and simmer for 2 minutes. Remove from the heat and add 1½ cups of powdered sugar. Use an electric mixer to beat the glaze at medium speed until smooth.

Glaze the cookies

Drizzle the glaze over the cookies.

Serve with glasses of milk or mugs of strong coffee!
