40g Parmesan cheese finely grated plus extra to serve
1 (150g) piece of Pancetta higher-welfare pancetta, hard skins removed and meat chopped
200g Spaghetti dried
1 clove Garlic peeled and crushed
Olive oil extra virgin
Salt to taste
Black pepper to taste

This Classic Carbonara is my grandfather’s favorite dinner and my grandmother loves the simplicity of the preparation required to make him happy!

He always tells us the same story about his mother surprising him every year with his favorite dish! This classic carbonara recipe is all you need to impress the ones you love and fill up their bellies!

So, how to make Classic Carbonara?

Steps to make Classic Carbonara

Season egg yolks and Parmesan

In a mixing bowl, stir egg yolks, Parmesan cheese and a pinch of pepper. Mix well with a fork and set aside.

Cook spaghetti

In a large pot of boiling, salted water, cook the spaghetti according to package instructions until al dente.

Cook pancetta skin

In a medium frying pan, rub pancetta skin over the base of the pan to enhance flavor and bring the heat to medium-high.

Cook garlic

Cook garlic in the fat of the pancetta skin for 1 minute until fragrant.

Add pancetta meat

Add the pancetta meat and cook for, while stirring, for 4 minutes until it begins to crisp up.

Drain spaghetti

Drain cooked pasta and reserve some of the cooking water for the carbonara sauce. Add spaghetti to the pan of cooked pancetta. Over medium heat, toss well until pasta really soaks up all the flavor. Remove from the heat.

Add pasta water

Add some of the reserved cooking water and toss well.

Season

Season generously with pepper.

Add egg mixture

Add the egg mixture to the pan making sure to cook the egg gently and not scrambled it. Toss well, adding more reserved water if needed.

Serve

Serve with grated Parmesan and sprinkles of freshly ground pepper.
