All you need to do is blend up coconut milk, fresh strawberries, a banana and some maple syrup and add to ice pop molds. I use 12 freezer pop molds for this recipe. Stick the pops in the freezer and before you know it, you’ll have some delicious strawberry vegan treats to enjoy.
Don’t worry if you’ve found this recipe and you don’t have any ice pop molds – you can still make these tasty treats with some paper cups and wooden sticks. Instead of pouring the mixture into the molds, divide it between 12 paper cups. Top each one with some foil and insert wooden sticks through the foil.
To make Vegan Coconut Milk Strawberry-Banana Pops, you will need the following ingredients:
In a food processor or blender, blend the coconut milk, most of the strawberries, banana and maple syrup until you have a completely smooth mixture.
While the mix is processing, add the remaining chopped strawberries to the ice pop molds.
Pour the strawberry and coconut mixture into molds. Fill the molds approximately to ¾ full.
Insert the holders to the molds. Freeze for at least 4 hours until the pops are firm.
Remove the strawberry pops from the molds and enjoy!
