4 Bell pepper cut in half lengthwise
1 (8-oz) block Cream Cheese softened
½ cup Sour cream
3 cups Chicken cooked, shredded
1 (10-oz) package Spinach frozen, defrosted and drained
2 cups Cheddar cheese shredded, divided
2 Green onion thinly sliced
½ tsp Ground paprika
Kosher Salt to taste
Black pepper to taste

Dinner literally couldn’t get easier than these awesome Creamy Chicken Stuffed Peppers. I’m not the biggest veggie fan so a great way to hide the flavors is to stuff them inside creamy, cheesy recipes like this one.

I stuff halved bell peppers with shredded chicken and spinach, cream cheese, Cheddar cheese and sour cream and green onions then top with more shredded Cheddar cheese. Don’t forget the paprika for a little spice, then bake in the oven until the cheese is melted.

Preheat oven

Preheat the oven to 400 °F.

Prepare bell pepper shells

Place the 4 halved bell peppers, cut-side up in a 9x13-inch baking pan.

Combine stuffing

In a mixing bowl, combine 8 oz of softened cream cheese with ½ cup of sour cream then add 3 cups of cooked and shredded chicken, 1 pack of thawed and drained spinach, 1 cup of Cheddar cheese, 2 thinly sliced green onions and ½ teaspoon of paprika. Season with salt and pepper then stir to mix until well combined.

Stuff peppers

Divide the cheesy chicken mixture, evenly, between the bell pepper halves to stuff, then top with sprinkles from the remaining 1 cup of shredded Cheddar cheese.

Cover the baking pan with some aluminum foil and bake in the preheated oven for about 30 minutes until softened then remove the aluminum foil and bake for another 10 minutes.
