To make Creamy Chicken Tomato Skillet, you will need the following ingredients:
In a large skillet over medium-high heat, heat oil.
Season chicken with ¼ teaspoon salt and pepper each.
Place chicken in the heated skillet and cook, without stirring, for about 4 minutes until chicken begins to brown.
Add tomatoes, onions, garlic and rosemary and cook, stirring occasionally for about 3 minutes until the onion and tomatoes both begin to soften.
In a bowl, whisk the stock and flour together until well mixed, then add to the chicken mixture. Stir together and scrape the browned bits from the bottom of the skillet. Bring to a boil and continue cooking, stirring often, for 3-4 minutes until the sauce thickens.
Heat rice according to package instructions.
Place heated rice in a medium sized mixing bowl. Add spinach, lemon zest, lemon juice, remaining ¼ teaspoon salt and pepper each and toss to coat well.
Divide rice mix on 4 servings plates and top evenly with skillet chicken.
