To make this delicious creamy soup, start by cooking shallots and garlic. Add flour and vegetable broth. Once incorporated, add oat milk, potatoes, kosher salt, and Old Bay seasoning. Cook until the soup becomes creamy and the potatoes fall apart when you mash one against the side of the pot with your spoon. Using a potato masher, break up the potatoes so that a creamy but chunky texture forms. Stir to incorporate and serve with your favorite toppings.
To make the Creamy Vegan Potato Soup, you will need the following ingredients:
Mince 2 large or 4 small shallots. Mince 4 garlic cloves and peel and dice the potatoes into small cubes.
Heat 4 tablespoons of coconut oil over medium heat. Add the chopped shallots and garlic and cook for 2 minutes. Shake 6 tablespoons of flour over the shallots. Cook while stirring for 2-3 minutes until the shallots start to brown.
Pour in 2 cups of vegetable broth gradually. Stir until mostly smooth. Once incorporated, add 4 cups of oat milk, the diced potatoes, 1¼ teaspoons of kosher salt and 2 teaspoons of Old Bay seasoning.
Bring the soup to a simmer. Cook on low for 20-25 minutes. Stir often and scrape the bottom to make sure nothing sticks. Keep stirring or a skin will form on the top.
Remove the soup from the heat. Using a potato masher, break up the potatoes so that a creamy but chunky texture forms. Stir to incorporate the mashed potatoes.
Serve topped with a selection of your favorite toppings.
