I sometimes really enjoy this salad on its own with the Roma tomatoes, sliced cucumbers, diced avocado and freshly chopped cilantro, dressed in a simple olive oil and lemon juice dressing that is filling enough and just what you need for that refreshing lunch. This easy salad also compliments any table so well!

Combine salad ingredients

In a large salad bowl, toss chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro together.
