This beautiful and fresh Cucumber Tomato Salad is a wonderful starter or side dish to add to your next party menu. Design your platter with a colorful combination of cucumbers, tomatoes and your freshly made, pickled red onions.
You will need to prepare this dish in advance as the onions need enough time to marinate in the vinaigrette pickling juice – a mix of coriander, mustard and cumin seeds with cider vinegar. Garnish with extra sprinkles of cilantro leaves for that special touch.
To make Cucumber Tomato Salad, you will need the following ingredients:
Place chopped onion in a ceramic or glass bowl.
In a large saucepan over medium heat, cook coriander seeds and mustard seeds for 1-2 minutes until both begin to pop. Add cumin seeds and cook while stirring for 10 seconds until fragrant.
Add vinegar, 1 cup water, sugar and salt to taste. Allow to simmer for 1-2 minutes until the sugar and salt is dissolved.
Pour the dressing over the onions and allow to stand until room temperature. Cover bowl with plastic wrap and refrigerate for 1 hour or up to 2 days, to chill and marinate.
Drain the dressing from the onions, leaving a remaining ¼ cup of the pickling liquid.
Arrange tomatoes, cucumber and pickled onions on a serving platter. Dress salad with drizzles of olive oil and the remaining ¼ cup pickling liquid.
Garnish with cilantro and serve.
