This side dish couldn’t be easier to make either. Start by cooking and cooling potatoes. Combine egg yolks with garlic, cream, sour cream, butter, and peppercorns and season generously with salt. Peel the potatoes and pass them through a ricer or a food mill directly into the bowl with the egg mixture. Fold the potatoes in gently, taking care not to overmix. Transfer the mixture to a baking dish and decorate the top. Bake in the oven until golden brown. Enjoy!
To make these Duchess Baked Potatoes, you will need the following ingredients:
Place 6 potatoes in a large pot. Pour in water until the potatoes are covered by 2 inches. Season with salt and bring to a boil over medium-high. Reduce heat. Simmer for 25–35 minutes until the potatoes are tender when pierced.
Drain and leave to cool slightly.
Heat the oven to 425 °F.
Place 3 large egg yolks, 1 finely grated garlic clove, ¾ cup of heavy cream, ¼ cup of sour cream, 5 tablespoons of melted unsalted butter, and ½ a teaspoon of ground peppercorns in a large bowl. Whisk together and season generously with salt.
Peel the cooled potatoes and pass the potato through a ricer or a food mill straight into the bowl with egg mixture.
Fold the potato in gently and take care not to overmix.
Transfer the potato mixture to an 8x6-inch baking dish. Decorate the top with swirls.
Bake in the oven for 30–40 minutes, rotating once halfway through, until golden brown and slightly puffy on top.
