These Duchess Potatoes are a classic French recipe that tastes absolutely delicious. The secret ingredient to make these tasty potatoes? Butter! I think Yukon Gold potatoes work best for this recipe.

These potatoes are quite easy to make too. Don’t let the piping put you off. If you don’t have a piping bag, you can spoon the potatoes into a baking dish. Start by cooking potatoes and mash with butter, nutmeg, and cream. Transfer the potatoes to a piping bag, and pipe pretty swirls onto a cookie sheet. Bake until golden brown and delicious.

Steps to make Duchess Potatoes

Boil potatoes

Place 2 pounds of potatoes in a large pot. Cover with about 2 inches of cold water. Season the water with two teaspoons of salt. Bring to a boil. Reduce heat and simmer for about 20-25 minutes until the potatoes are tender.

Melt butter

Melt 2 tablespoons of butter and set to one side.

Heat oven

Preheat the oven to 425 °F.

Drain potatoes

Drain the potatoes in a colander. Return them to the pot and place over low heat for one minute to release steam.

Mash potatoes

Add the remaining 2 tablespoons of butter to the cooked potatoes. Once the butter is incorporated, add ¼ teaspoon of nutmeg, ½ teaspoon of black pepper, and ¼ cup of heavy cream. Continue to mash the potatoes.

Add eggs

Add 3 egg yolks and continue to mash until the mixture is smooth. Do not over-mash or the potatoes will end up with a sticky consistency.

Pipe potatoes

Fill a piping bag with a large star point with mashed potato. Pipe potato swirls onto a cookie sheet.

Brush with melted butter

Brush the potato swirls with melted butter.

Bake in the oven for about 20 minutes until nicely browned.
