For cake:
1 ¾ sticks (200g) Unsalted butter
½ cup (120 ml) Milk
1 ¾ cups (240g) All-purpose flour
1 ½ tsp Baking soda
⅔ cup (65g) Cocoa powder
1 ½ cups (300g) Granulated sugar
¼ tsp Salt
2 Large eggs
⅔ cup (160 ml) Sour cream
½ cup (120 ml) Coffee hot water mixed with 1-2 teaspoons instant coffee powder/granules or hot water
For chocolate ganache:
7 oz (200g) Chocolate semisweet or bittersweet chocolate, finely chopped
¾ cup (180 ml) Heavy cream
Colored sprinkles to taste

This Chocolate Birthday Cake is the perfect dessert to whip up for a crowd when you don’t have all day to bake and assemble. It features ultra moist and rich cake and a decadent chocolate ganache topping. This soft and fluffy chocolate cake yields 24 servings and is great for a big birthday crowd.    

Deliciously moist and rich, this chocolate sheet cake is so easy and so good. Once you have the cake baked, you simply cover the cake with a silky-smooth chocolate ganache. Give it some extra decoration by topping the chocolate frosting with colorful sprinkles, slice and serve. So yummy!

Steps to make Easy Chocolate Birthday Cake

Heat oven and prepare baking pan

Preheat the oven to 350 °F and grease an 8х12-inch baking pan.

Combine butter and milk

Melt 1 ¾ sticks butter, add ½ cup milk and mix to combine. Set aside to cool slightly.

Mix all dry ingredients

In a large bowl, mix together 1 ¾ cups flour, 1 ½ teaspoons baking soda, ⅔ cup cocoa powder, 1 ½ cups sugar, and ¼ teaspoon salt.

Stir in the wet ingredients

Add the butter mixture, 2 large eggs, and ⅔ cup sour cream to the dry ingredients and stir until just combined.

Add hot water or coffee

Whisk in ½ cup hot water or coffee and mix until smooth.

Bake

Pour the mixture into the prepared baking pan. Bake the cake for 20-25 minutes or until a skewer inserted into the center comes out clean. Don’t overbake.

Cool

Once baked, let the cake cool completely on a wire rack.

Make frosting

In a medium heat-proof bowl set over a saucepan of simmering water, place 7 ounces finely chopped chocolate and ¾ cup heavy cream. Stir occasionally until melted.

Frost

Cover the cooled cake evenly with the prepared chocolate frosting. Add sprinkles if desired. Refrigerate for 1 hour until set. Keep in the fridge before serving. The cake will keep well in the refrigerator in an airtight container for up to 5 days.
