This Easy Marinated Mushrooms recipe is one of my staple recipes that I make in summer. I always like to keep a jar of these mushrooms in the refrigerator in case I fancy adding them to a salad or a sandwich. I sometimes like to serve little plates of these marinated mushrooms as an appetizer or as a side dish.
They are really easy to make too. Start by cooking mushrooms for about 15 minutes. Drain them and add to jars with diced garlic. Make a marinade from water, sugar and salt, peppercorns, bay leaves, vinegar and chopped bell pepper and onion. Top up the jars with the marinade and chill in the refrigerator.
To make my version of Easy Marinated Mushrooms, you will need the following ingredients:
Place mushrooms in a pot filled with water, ¼ cup of vinegar and 1 tablespoon of salt. Bring the contents of the pot to a boil and simmer for 15 minutes until the mushrooms are cooked.
Drain the liquid from the mushrooms and set to one side.
Chop onion and bell pepper into small cubes. Finely slice garlic.
Place 2 cups of water, 1 tablespoon each of sugar and salt, 1 tablespoon of peppercorns and 6 bay leaves in a pot and bring the mixture to a boil.
Add ¼ cup of vinegar and chopped bell pepper and onion once the sugar and salt has dissolved. Set to one side to cool.
Place the chopped garlic at the bottom of the jars. Fill the jars with cooked mushrooms and ½ a bunch of fresh dill. Top up with the marinade. Cover with lid.
Chill the mushrooms at room temperature for at least 5-6 hours. Then place it in the fridge for 1-2 days.
Serve as a cold side dish or as an appetizer.
