Easy Twice Baked Potatoes is one of my go-to side dishes! They are so easy to prepare and cook. I usually bake my potatoes in the oven but if you are short on time, you can use the microwave instead.
Once your potatoes are baked, scoop out the flesh into a bowl and mash it with sour cream, butter, garlic powder, salt and pepper. Pour in the desired amount of milk or buttermilk and stir through some bacon, chives and cheddar cheese. Bake the potato skins for a second time in the oven until the cheese has melted.
To make my version of Easy Twice Baked Potatoes, you will need the following ingredients:
Heat your oven to 375 °F.
Poke each of the potatoes with a fork. Bake in the oven for 1 hour until soft. Remove from the oven and leave to cool slightly.
Once cool enough to handle, cut each potato in half lengthwise. Spoon out the potato pulp leaving a ⅛ inch potato skin shell.
Mash the scooped out potato with the sour cream, butter, garlic powder, salt and pepper together in a bowl until smooth. Pour in milk or buttermilk as required to make a creamy texture. Mix in the bacon, chives and ¾ cup of cheddar cheese.
Pile the filling onto each potato skin and top with the remaining cheese.
Bake in the oven for 15-20 minutes until the cheese melts.
Serve alongside your favorite grilled dish.
