Back to basics today with my quick Easy Vanilla Sponge recipe! I wanted to share one of my very basic cake recipes with you as it’s always important to have some classic recipes that you can use as a stepping off point for making ever more delicious and extravagant creations!

This sponge recipe is super simple to follow but it does have a special twist which makes it one of my favorites. I only use egg yolks, and not the egg whites (helpful hint – if you’re making meringues, this is a great recipe to use up the yolks!). This produces a beautiful gold cake, yellow and rich, with a slightly denser crumb than whole egg recipes.
Flavored simply with vanilla, it’s delicious on its own but can be adapted and decorated to make it your own!

Steps to make Easy Vanilla Sponge

Heat the oven and prepare baking tins

Preheat the oven to 350°F. Lightly grease 2 small round cake tins and dust with flour.

Sift the flour

Sift the flour, baking powder and salt together into a bowl.

Beat the butter and sugar

In a separate bowl, beat the butter and sugar together.

Add the eggs and vanilla

Pour in the egg yolks and vanilla extract and cream together until light and fluffy.

Add the milk and flour

Add a third of the flour mixture to the egg mixture and beat to combine. Stir in half the milk, followed by another third of the flour, mixing well after each addition and then repeat.

Prepare the cakes for baking

Divide the batter between the prepared pans.

Bake the cakes

Bake for 25-30 minutes. To test if the cakes are ready, insert a toothpick into the center. If it comes out clean, the cake is baked through.
