To make these tasty pancakes, start by making vegan batter. The batter will be lumpy and full of big bubbles but that’s ok, it’s better not to over mix it! Pour the batter on a prepared baking sheet and even with a spatula. Decorate the top of the pancake with any optional toppings as desired. Bake in the oven until the edges are lightly browned and the top is still pale. Check it’s cooked by lightly poking the top. Slice into 16 small squares and serve with maple syrup and additional toppings.
To make my Easy Vegan Sheet Pan Pancakes, you will need the following ingredients:
Heat the oven to 425 °F. Grease a baking sheet lightly.
In a large bowl, mix 2¼ cups of all-purpose flour with 3 tablespoons of white sugar, 1 ½ tablespoons of baking powder, and ½ a teaspoon of salt. Whisk to combine.
Add 2 cups of plant-based milk, 1½ tablespoons of lemon juice, 6 tablespoons of melted vegan butter and 1 teaspoon of vanilla extract. Stir until fully combined.
Transfer the pancake batter to the prepared baking sheet and spread evenly with a spatula.
Decorate the pancake batter with your desired toppings.
Bake in the oven for about 15 minutes until lightly browned on top.
Slice into sixteen equal pieces and serve with additional toppings.
