These Eggplant & Mozzarella Stick Roll-Ups would be a great addition to your party food menu – they are easy to make because you use store bought mozzarella sticks. They are also easy to serve and most importantly for your guests, they are easy to pick up and eat while mingling at a party.

This recipe serves 4 but you can increase it depending on your numbers. Start by cooking the mozzarella sticks according to the package directions. Meanwhile make a tomato and garlic based sauce. Fry eggplant slices in hot oil and drain them on paper towels and then use them to roll up the mozzarella sticks. Bake for 5 minutes to heat them up before serving with the tomato sauce.

    Heat the oven to 350 °F and cook the mozzarella sticks according to the directions on the package.

    Trim the eggplant and cut off the sides so that it is rectangular and even. Slice lengthwise into eight ¼ inch thick slabs. Place these on a baking sheet and season with ¼ teaspoon salt. Set aside for 10 minutes.

    Mash the chopped garlic with ⅛ teaspoon of salt using a fork. Place the garlic in a bowl and stir in the tomatoes, basil and ¼ teaspoon pepper. Place to one side.

    Beat the eggs together lightly in a shallow bowl or dish. Heat a tablespoon of oil in a large nonstick pan or skillet over medium-high heat. Dredge 2 eggplant slices in the egg, and allow the excess to drip off. Fry the eggplant in the oil until brown on both sides. Drain on a plate or baking sheet lined with paper towels and repeat.
