Start by blending feta cheese, green onions, and egg to make the filling. Cut the pastry into squares and place filling in the center of each square. Moisten edges with water, fold the pastry over to form a triangle and press the edges together firmly with a fork to seal. Brush the pastries with egg yolk mixture and bake in the oven until golden brown. These parcels taste best served warm or at room temperature.
To make my Feta Cheese Foldovers, you will need the following ingredients:
Preheat the oven to 375°F.
Combine 8 ounces of crumbled feta cheese with 3 tablespoons of finely chopped green onions and 1 beaten egg in a small bowl.
Use a knife to cut the pastry into 12 (3 inch) squares.
Place a large tablespoon of the feta filling in the center of each pastry square. Do not overfill. Dampen the edges with water, and fold the pastry over the filling to make a triangle. Use a fork to press the edges together to seal.
Brush each of the pastries liberally with the egg yolk mixture.
Bake the pastries in the preheated oven for 20 minutes.
Serve warm or at room temperature.
