This Frankenstein Pasta is such a great Halloween meal for kids! It’s super quick to make (less than 20 minutes) and it’s quite healthy too as Halloween cooking goes. My kids love this scary pasta dish and I’m sure yours will too!
Start by combining basil, garlic, pine nuts, Parmesan, salt, and olive oil in a blender to make pesto. Cook whole wheat pasta in boiling water according to the package instructions. Drain and add the pesto sauce. Leave to cool. Meanwhile, chop 1½ cucumbers and stir into the pasta. To make the Frankenstein effect, pour the contents of the pan onto a platter and shape the pasta into a rectangle. Cut two thick slices of mozzarella and shape them into circles using a knife or cookie cutter. Create Frank’s hair, pupils and a mouth from olives. Use the remaining cucumber to make the Frankenstein “bolts” in the side of his neck. Rarrrr!
To make Frankenstein Pasta, you will need the following ingredients:
Place 1 cup of fresh basil, 2 cloves of garlic, ⅓ cup of pine nuts, ⅓ cup of grated Parmesan cheese, and a pinch of salt in a food processor with ⅓ cup of olive oil. Blend until smooth. Taste and adjust garlic and seasoning if required.
Bring a pan of water to a boil. Cook 16 ounces of pasta in the boiling water according to the package instructions. Drain.
Mix the pesto with the pasta and leave to cool slightly.
Peel and chop up 1½ cucumbers. Stir the pieces into the pasta.
Transfer the pasta to a platter and shape into a rectangle to make the head. Cut two slices of mozzarella for the eyes. Shape them into circles using a knife or cookie cutter. Use olives to create hair, pupils and a mouth.
Make neck bolts using the remaining cucumber pieces and serve.
