1 tbsp Butter or oil, for greasing
50 g All-purpose flour
3 tbsp Cornstarch
1 tsp Baking powder
4 Eggs separated
175 g Caster sugar
For the Filling:
295 g Peaches fresh or canned, drained
200 g tub Fromage frais low-fat
Powdered sugar for dusting

I love this Fruity Sponge Cake, especially as a baking option with the kids. Fun to decorate and looks so pretty that it really encourages eating more fruit – especially when it’s on cake! Sponge cake recipes are generally quite simple and this particular one takes just 30 minutes to prepare, just another reason as to why this recipe is perfect for children!

Steps to make Fruity Sponge Cake

Preheat oven and prepare baking tray

Preheat the oven to 180 C/fan 160 C/gas 4 and grease and line the base and sides of two 20-cm cake tins with baking parchment paper.

Combine dry ingredients

In a mixing bowl, sieve 50 grams of flour, 3 tablespoons of cornstarch and 1 teaspoon of baking powder together and combine.

Beat egg whites

In a separate bowl, using an electric beater, whisk 4 egg whites until stiff.

Add sugar

Add 175 grams of caster sugar and beat into the egg whites a few times.

Add egg yolks

In a small bowl, quickly beat 4 egg yolks together then add them to the bowl of egg whites and whisk until combined.

Combine wet and dry ingredients

Using a metal spoon, fold in dry ingredients until well combined.

Bake

Transfer the batter to the prepared tins and smooth over the top. Bake in the preheated oven for about 18-20 minutes until risen and light golden in color. Allow to cool for about 10 minutes before removing to cool completely.

Combine topping

In a mixing bowl, combine the fromage frais and the peach chunks together then smooth over the top of one cooled cake and sandwich the second piece over the filling.

Serve

Dust with sprinkles of powdered sugar and serve!
