This garlicky shrimp and creamy rice is super quick and easy to make and makes a great weeknight family meal, especially when you are in a rush or want a break from the regular chicken dinner. For this recipe, I use instant rice to speed up the prep time and it works like a charm. The best way to thaw frozen shrimp is to leave shrimp in its package in the fridge overnight. But if it’s not your case, use a bowl of cold water to thaw your shrimp faster.
To make the Garlic Butter Shrimp and Rice, you will need the following ingredients:
Cook 1 cup instant rice according to the instructions on the package.
In a large skillet over medium heat, melt 6 tablespoons butter.
Add 4 cloves minced garlic and cook, stirring constantly, for 3 minutes. Be careful not to burn the garlic.
Add in 12 to 16 ounces thawed shrimp and cook for 2 minutes, stirring frequently, until pink.
Add cooked rice and mix until combined.
Stir in ¼ cup Parmesan cheese, 3 tablespoons milk, 2 tablespoons chopped parsley, salt and freshly ground black pepper to taste. Stir for 1-2 minutes until creamy and heated through.
Garnish with extra Parmesan cheese if you wish and serve.
