Ingredients

2 cups (250 g) All-purpose flour
1 tbsp (15 g) Sugar
1½ tsp Garlic powder
¼ tsp Salt
2½ tsp (10 g) Baking powder
5 tbsp (70 g) Unsalted butter cold, cut into small cubes
¾ cup (200 g) Buttermilk cold
For Filling:
5 oz (140g) Mozzarella cut into 18 pieces
For Brushing:
2 tbsp (30g) Butter
¼ tsp Salt
1 tsp Parsley chopped
1 clove Garlic minced

These Garlic Cheese Bombs literally, are the bomb. One of my favorite cheat meals and you bet I make double because my kiddies fingers will be all over these too.

Soft, and moist dough balls made with flour, a little bit of sugar, garlic powder, salt, baking powder, butter and buttermilk – which binds it all together, and then I stuff the balls with mozzarella cheese that melts to a gooey, cheesy texture when baked in the oven. The garlic and herb butter, brushed over the top, finishes these delicious bites, to perfection.

Steps to make Garlic Cheese Bombs

Preheat oven and prepare baking sheet

Preheat the oven to 400 °F and line a baking sheet with parchment paper.

Combine dry ingredients

In a large mixing bowl, combine 2 cups flour, 1 tablespoon of sugar, 1½ teaspoons of garlic powder, ¼ teaspoon of salt and 2½ teaspoons of baking powder.

Add butter

Using a pastry cutter or sharp knife, cut 5 tablespoons of butter cubes into the dry mixture until the mixture resembles pea-size crumbs.

Add buttermilk

Pour in ¾ cup of cold buttermilk and gently knead to combine and come together.

Refrigerate

Refrigerate for about 15 minutes, to chill into a dough.

Prepare dough pieces

Once set, turn the dough out onto a lightly floured surface into a 12x15-inch rectangle shape and cut into 18 equal pieces.

Stuff with mozzarella

Place a cheese piece in the center of each dough piece and wrap with dough to cover the cheese all around. Seal the edges well, roll into a ball and transfer to the prepared baking sheet.

Bake

Bake in the preheated oven for about 15-18 minutes until golden brown.

Prepare garlic and herb butter

In a small sauce, heat and combine 2 tablespoons of butter, ¼ teaspoon of salt, 1 teaspoon of fresh, chopped parsley and 1 clove of minced garlic. Cook for 1 minute then remove from the heat.

Brush

Remove the cheese bombs from the oven and brush over the tops with the prepared garlic and herb butter.

Serve hot and enjoy!
