1 lb Large Shrimp or jumbo
6 tbsp Butter
¼ cup Olive oil extra-virgin
4 cloves Garlic smashed and minced
1 tbsp Basil fresh, chopped, or 1 tsp dried leaf basil
1 tbsp Parsley fresh, chopped, or 1 tsp dried parsley flakes
½ tsp Kosher Salt
½ tsp Creole seasoning seasoned salt blend
Optional Garnish
fresh chopped Parsley

Garlic Chicken and Shrimp shouldn’t work as a flavor combination, but I am here to tell you that it does! In fact, it’s amazing – juicy shrimp, tender chicken and pungent garlic combine to make a quick and delicious midweek meal.

Start by pounding the chicken breasts to flatten them. Then peel and devein the prawns which is a messy job, but not as difficult as it sounds. Simply peel off the shell and slide a small sharp knife down the back of each shrimp. Cook the chicken and shrimp in melted butter and add basil, parsley and seasoning. Yum!

Flatten the chicken

Flatten the chicken by lightly pounding it between sheets of plastic wrap until they are even thickness.

Cut the chicken

Slice the chicken into 1 inch wide strips.

Peel and devein shrimp

Peel the shrimp and cut into the back of each one using the tip of a small, sharp knife and remove the dark vein. Rinse the shrimp with cold running water. Pat each shrimp dry using paper towels.

Melt butter and olive oil

Place the butter in a large pan or skillet over medium heat. Melt the butter in the pan with the olive oil.

Add garlic, herbs and seasoning

Add the garlic, basil, parsley, salt, and seasoning. Turn the heat down to medium-low and mix in the the chicken and shrimp.

Cook the chicken and shrimp

Cook while stirring, for 10-15 minutes until the shrimp have turned pink.

Serve

Serve over hot cooked pasta or rice. Sprinkle fresh chopped parsley over the top.
