Recipe Description

This Ginger Pork and Cucumber Salad with Mint is definitely one of my favorite dishes of all time. Juicy ground pork, cooked with Asian infused spices and flavors of garlic, red chili, ginger and soya sauce served with a cool mint and cilantro cucumber salad to perfectly balance out the heat.

All you need is a portion of fluffy, long-grain white rice to complete this dish. It’s wonderful.

    Brown pork

    In a cast-iron skillet, heat canola oil, and cook ground pork for 7 minutes, until browned.

    Gently stir 2 tablespoons lime juice, 1 tablespoon soya sauce, ½ tablespoons ginger and brown sugar.

    Pour dressing over the cucumber and scallions and toss well to coat. Add cilantro and mint and combine.
