In a large bowl, using a hand or stand mixer, cream ¾ cup softened salted butter with 1 cup brown sugar.

Add wet ingredients

Add in 1 large egg and ¼ cup molasses and mix well to combine.

Stir in flour, baking soda and spices

Add in 2 ½ cups all-purpose flour, 2 teaspoons baking soda, 1 teaspoon nutmeg, 1 teaspoon ground ginger, and 1 teaspoon cinnamon and stir until well combined.

Cover the bowl with plastic wrap and chill in the refrigerator for about 2 hours until firm but easy to roll.

Heat oven and prepare baking sheets

Preheat the oven to 375 °F and line two baking sheets with parchment paper.

Roll dough balls

Remove the dough from the fridge and shape it into 18 equal-sized balls. Roll each dough ball in powdered sugar, ensuring they are coated well. Arrange the dough balls on the prepared baking sheets with enough space between them. Keep the dough in the refrigerator if baking in batches.
