Heat the oven to 350 °F and grease a 9x5x3-inch loaf pan.
In a mixing bowl, mix ground ham, mustard, chopped onion, parsley, oats, milk, and egg until combined. Transfer and press into prepared loaf pan.
In a small saucepan, stir brown sugar and vinegar, heat until sugar has dissolved. Pour over the meatloaf.
Bake in preheated oven for 60 minutes.
Before serving, garnish with tomato slices, spinach leaves, hard-cooked egg slices, if you wish.
