I have been trying for ages to replicate Kentucky Fried Chicken™-Style Coating and I think I’ve finally cracked it! Even better, I’ve come up with a gluten-free version. One of my close friends is gluten intolerant and one of the things she misses most is fried chicken because most of the recipes use flour, which is a source of gluten. So I challenged myself to come up with a gluten-free chicken coating just for her. The secret is to use corn flour instead.
To the corn flour, I mix some salt, garlic powder, dry mustard and a variety of other spices like paprika, ginger, thyme, basil and oregano. I shake it all together and use it to coat pieces of chicken. My friend was so happy and I now use this mix any time I am cooking my take on Kentucky Fried Chicken.
To make the Gluten-Free Kentucky Fried Chicken™-Style Coating, you will need the following ingredients:
Add the corn flour, paprika, MSG, salt, garlic powder, dry mustard, celery salt, pepper, ginger, thyme, basil, and oregano to a large jar.
Close the lid of the jar tightly and shake well until the mix is fully combined.
Add the coating to a bag. Put some chicken pieces in the bag, close it, and shake until the chicken is fully coated.
Cook the chicken in hot oil.
Pile the chicken on a plate (or in a sharing bucket if you have one!).
