To make Gluten-Free Plum Cake, you will need the following ingredients:
Preheat the oven to 350 °F and line an 8-inch cake pan with baking parchment paper.
In a medium bowl, whisk the coconut oil, ⅔ cup coconut sugar, and eggs together until light and fluffy.
Fold in the flour, baking powder and sea salt and gently mix to form the cake batter.
Spice plums with coconut sugar, cinnamon, and lemon juice and toss to coat all over.
Pour the batter into prepared pan. Press spiced plum halves, cut-side down to top the batter.
Bake in preheated oven for 40 minutes until a wooden toothpick inserted into the center comes out clean.
Allow to cool for at least 30 minutes before removing cake and slicing to serve!
