Ingredients

1 ½ cups (190g) All-purpose flour spooned and leveled
1 ½ tsp Baking powder
½ tsp Salt
3 Large eggs
¾ cup (180g) Greek yogurt
1 cup (200g) Brown sugar packed light
½ cup (120ml) Vegetable oil or canola oil (melted + slightly cooled coconut oil works too)
¼ cup (60ml) Grapefruit juice freshly squeezed , strained
1½ tbsp Grapefruit zest
1 tsp Vanilla extract pure
For the Grapefruit Glaze:
1 cup (120g) Confectioners' sugar sifted
2 tbsp (30ml) Grapefruit juice freshly squeezed , strained
¼ tsp Vanilla extract pure

My kitchen trick to baking a cake that turns out extra moist and creamy is by adding Greek yogurt to the recipe. If you have pink grapefruit at your local supermarket and they’re in season then this is the perfect recipe to experiment with. Simple steps for a smooth baking experience!

Steps to make Grapefruit Greek Yogurt Cake

Preheat oven and prepare baking pan

Preheat the oven to 350 °F and grease a 9×5-inch loaf pan.

Combine dry ingredients

In a large bowl, whisk 1½ cups flour, 1½ tsp baking powder and ½ tsp salt together until combined.

Whisk eggs

In a clean bowl, beat 3 large eggs together.

Add wet ingredients

Add ¾ cup Greek yogurt, 1 packed cup of brown sugar, ½ cup oil of your choice, ¼ cup freshly squeezed grapefruit juice, 1½ tablespoon grapefruit zest, 1 teaspoon vanilla extract. Whisk until combined.

Combine wet and dry ingredients

Pour the wet ingredients into the bowl of dry ingredients and whisk until just combined and do not over mix.

Transfer batter to prepared loaf pan and smooth over the top. Bake in preheated oven for about 45-50 minutes until a wooden toothpick inserted into the center comes out clean. Remove from oven and transfer to a wire rack to cool completely.

Prepare glaze

In a small mixing bowl, whisk 1 cup confectioners’ sugar, 2 tablespoons freshly squeezed grapefruit juice and ½ teaspoon vanilla extract. Drizzle prepared glaze over the completely cooled cake.

Store at room temperature or in the fridge for up to 5 days, if there are any leftovers!
