¾ tsp Kosher Salt
1 tbsp Grapefruit zest finely grated
1 cup Granulated sugar
2 Large eggs room temperature
⅓ cup Vegetable oil
1 tsp Vanilla extract
8 tbsp Grapefruit juice divided
¾ cup Greek yogurt plain
1 tbsp Poppy seeds
For the yogurt glaze
1 tbsp Greek yogurt plain
Poppy seeds for sprinkling
½ cup Powdered sugar
1 tsp Water
1 pinch Salt

We’ve all heard of the traditional lemon and poppy seed combination, but this Grapefruit–Poppy Seed Loaf Cake with Yogurt Glaze takes it up a notch. I love any citrus flavored cakes so this loaf cake is a real winner in my book. This is a simple recipe which you can bake up for morning coffee or afternoon tea!

It’s simple to make too – start by mixing the dry ingredients together. Combine the grapefruit zest with the granulated sugar before mixing in eggs, oil, and vanilla. Alternate adding dry ingredients and yogurt to the wet ingredients to make a cake batter. Place the batter in a loaf tin and bake it. Drizzle over a yogurt glaze and sprinkle with poppy seeds.

Steps to make Grapefruit–Poppy Seed Loaf Cake with Yogurt Glaze

Heat the oven and prepare a tin

Preheat the oven to 350 °F. Line a 8 ½ x 4 ½ inch loaf tin with baking paper and lightly coat it with nonstick spray.

Combine dry ingredients

In a medium bowl, mix the flour, baking powder and salt until fully combined.

Mix sugar and grapefruit zest

In a large baking bowl, work the grapefruit zest into the granulated sugar using your fingers until the sugar starts to clump and mixture is fragrant.

Beat in eggs, oil and vanilla

Add the eggs, oil, and vanilla. Beat well using an electric mixer for about 4 minutes on high speed, until the mixture is light and thick.

Add dry ingredients and yogurt

Turn the speed down to low. Mix in half of the dry ingredients until fully incorporated. Add ¾ cup of yogurt before mixing in the remaining dry ingredients.

Add grapefruit juice and poppy seeds

Add 5 tablespoons of the grapefruit juice and poppy seeds. Place the cake batter in the prepared pan and smooth the top.

Bake for 50-60 minutes until the loaf has risen and is golden on top. When it is cooked an inserted toothpick should come out clean.

Place the pan on a wire rack. Using a skewer or toothpick, poke holes in the top of cake and drizzle the remaining 3 tablespoons of grapefruit juice over top. Leave the loaf to sit for about 15 minutes before running a knife around the sides to loosen it. Lift the cake out of the pan and place it on the wire rack. Remove the parchment and leave to cool completely.

Make the yogurt glaze

Whisk the powdered sugar, yogurt, water, and a pinch of salt in a medium bowl until you have a smooth glaze.

Decorate

Drizzle the glaze over the loaf cake and sprinkle with poppy seeds. Leave the cake to sit for about 30 minutes until glaze sets.

Serve thick slices with a cup of your favorite tea or coffee.
