For the loaf

- 1 tbsp Greek yogurtplain

Grapefruit–Poppy Seed Loaf Cake with Yogurt Glaze
We’ve all heard of the traditional lemon and poppy seed combination, but this Grapefruit–Poppy Seed Loaf Cake with Yogurt Glaze takes it up a notch. I love any citrus flavored cakes so this loaf cake is a real winner in my book. This is a simple recipe which you can bake up for morning coffee or afternoon tea!
It’s simple to make too – start by mixing the dry ingredients together. Combine the grapefruit zest with the granulated sugar before mixing in eggs, oil, and vanilla. Alternate adding dry ingredients and yogurt to the wet ingredients to make a cake batter. Place the batter in a loaf tin and bake it. Drizzle over a yogurt glaze and sprinkle with poppy seeds.

Place the pan on a wire rack. Using a skewer or toothpick, poke holes in the top of cake and drizzle the remaining 3 tablespoons of grapefruit juice over top. Leave the loaf to sit for about 15 minutes before running a knife around the sides to loosen it. Lift the cake out of the pan and place it on the wire rack.
