My Greek Nachos recipe is inspired by my travels in Greece. I fell in love with Greek food and flavor combinations when I was there. Fresh salads with tomatoes, olives and feta. Sprinkled with the freshest oregano, mint and olive oil with a slight hint of spice. Invariably, our meals there featured the most famous Greek ingredient in some form: feta cheese.
Feta makes an appearance as a topping in this dish. Start by crisping some pita chips in the oven. Make a mint sauce from yogurt, mint, lemon juice and olive oil. Assemble the dish by placing the pita chips on a plate. Top with a selection of your favorite toppings and drizzle the mint sauce on top. Serve and watch these disappear!
To make my version of Greek Nachos, you will need the following ingredients:
Preheat the oven to 400 °F.
Slice each pita bread around the edge into two rounds.
Quarter each pita round and place the quarters on an ungreased cookie sheet.
Drizzle with oil and sprinkle the salt over the pitas. Bake in the oven for 10-15 minutes until the pita chips are golden and crisp.
While the pitas cook, stir the yogurt, lemon juice, mint and olive oil together in small bowl.
Place the pitas on a large plate. Top with your favorite toppings and drizzle with the mint sauce.
