½ cup Greek yogurt
¼ cup Mayonnaise
½ cup Avocado diced
½ cup Parsley roughly chopped
¼ cup Cilantro roughly chopped
2 tbsp Pesto basil pesto, jarred
1 tbsp Capers optional
2 cloves Garlic minced
2 tbsp Lemon juice
Salt to taste
Black pepper to taste
4 cups Chicken Breast cooked, shredded or cubed
For serving:
½ Avocado diced
½ cup Cherry tomatoes halved
1 cup Mixed greens

This salad is simple to toss together, extra bright, super flavorful, delicious, and healthy too. It’s the perfect lunch or light dinner to serve any day of the week from now through summertime.

But first things first. Let’s talk about the green goddess dressing. This dressing is a gardener’s dream – herby and vibrant! With a food chopper, it is incredibly easy to put the dressing together. You can also use a blender or food processor instead. Besides, you can whip up the dressing ahead, and store it in an airtight container. It will keep well for up to 4 days in the fridge. For this salad, you can use any mixed greens you love most. For the toss-ins, I use my favorite juicy cherry tomatoes, along with silky avocado, and any kind of leftover cooked chicken. Now, toss everything together, and a flavorful dish is done. Enjoy!

Steps to make Green Goddess Chicken Salad

Place dressing ingredients in blender

In a blender, place ½ cup Greek yogurt, ¼ cup mayonnaise, ½ cup diced avocado, ½ cup roughly chopped parsley, ¼ cup roughly chopped cilantro, 2 tablespoons basil pesto, 1 tablespoon capers, 2 cloves minced garlic, and 2 tablespoons lemon juice.

Blend

Blend on high speed, stopping to scrape down the sides a few times, until the dressing is smooth and creamy. Season with salt and black pepper to taste.

Chill

Transfer to a jar or airtight container and store in the fridge until ready to use.

Combine dressing and chicken

In a large bowl, combine 4 cups of cooked chicken and the dressing. Toss until well covered.

Add avocado and tomatoes

Fold in ½ a diced avocado and ½ a cup halved cherry tomatoes.
