Ingredients

4 tbsp Salted butter divided
2 tbsp Vegetable oil divided
5-6 oz Button mushrooms or cremini mushrooms, sliced
2 Yellow onions medium, thinly sliced
ÂĽ tsp Dried thyme
1 tbsp Sugar
1½ tbsp Balsamic vinegar
ÂĽ tsp Garlic powder
Salt to taste
Black pepper to taste
4 oz Gruyère cheese grated
1 package (1 lb) Frozen puff pastry thawed but chilled
1 Eggs lightly beaten

These Gruyere, Mushroom & Caramelized Onion Bites make a delicious Christmas side dish or they are perfect to serve as a canapé at any party you might be hosting this year. This is right at the top of my list of favorite Christmas side dish recipes. Everyone in my family adores these tasty little bites.

To make these bites, start by sautéing mushrooms in oil and butter. Remove the mushrooms from the heat and sauté onions. Add sugar and leave the onions to caramelize slowly. Mix onions and mushrooms together. Add cheese and leave to cool to room temperature. Prepare the pastry by slicing puff pastry into squares. Make sure the puff pastry is cold when you top it with the mixture and before it goes into the oven. If the pastry is not chilled, it may not puff up when cooking. Bake the topped pastry squares in the oven until golden.

Steps to make Gruyere, Mushroom & Caramelized Onion Bites

Sauté mushrooms

Heat 1 tablespoon of butter and 1 tablespoon of oil in a cast iron skillet. Sauté 5-6 ounces of sliced mushrooms in the pan for about 5 minutes. Remove and set to one side.

Sauté onions

Melt the remaining 3 tablespoons of butter and the remaining tablespoon of oil in the skillet and sauté 2 thinly sliced onions in it.

Caramelize onions

Add ÂĽ teaspoon of dried thyme and 1 tablespoon of sugar and continue to cook for 25 minutes over medium low heat until the onions caramelize. Stir the mixture every 5 minutes to ensure it does not burn or stick.

Deglaze pan

Deglaze the pan by adding 1½ tablespoons of balsamic vinegar and allow the onions to soak it all in. Remove the pan from the heat.

Combine with mushrooms

Add the caramelized onions to the mushroom mixture and stir.

Season and add cheese

Season with ÂĽ teaspoon of garlic powder, salt and pepper to taste. Stir well to combine and leave to cool to room temperature.

Add cheese

Add 4 ounces of Gruyere cheese and mix well.

Preheat oven and prepare baking sheets

Preheat the oven to 400 °F. Line 2 baking sheets with parchment paper.

Cut pastry into squares

Cut the puff pastry into 2-inch squares using a knife or a pizza cutter. Place them on the lined baking sheet. Use a pastry brush to brush the squares with beaten egg.

Top with mushroom and onions

Place a tablespoon of caramelized onion and mushroom mixture in the center of each pastry square.

Bake

Bake the squares in the oven for 15-20 minutes rotating once halfway through cooking.

Serve

Cool slightly before serving.
